We practice high-end viticulture to maximize the potential of our vines, highlighting the unique characteristics of the Shabo terroir. Hand-harvested early in the morning, the grapes arrive at the winery within 15–30 minutes for immediate processing. They undergo destemming and partial crushing to preserve their natural integrity.
Fermentation takes place in stainless steel tanks for 7–10 days at 26–28°C, followed by post-fermentation maceration, with its duration determined through expert tasting. Malolactic fermentation is then carried out at 20°C in stainless steel tanks, enhancing the wine’s smoothness and balance.
Color: deep ruby red.
Nose: dark fruit with notes of black currant and ripe plum, chocolate, tobacco.
Palate: well-rounded, good balance, medium tannins, pleasant finish.
